Switch your weeknight dinner routine up with a lemony-garlic pasta that is easy to make and delicious to eat! The freshly minced garlic combined with triple-colored tomatoes over a bed of angel hair noodles will appeal to tastebuds of all ages. This dinner is perfect for reheating and serving as leftovers too! It does not get much better than that for cooking dinner at home on a weeknight.
WHAT YOU NEED
- 1/2 Lemon
- 1 Box Angel Hair Pasta
- 5-6 Tablespoon Olive Oil
- 1/4 Cup Shredded Parmesan
- 1 Package Tri-Colored Cherry Tomatoes
- 4 Garlic Cloves
- Pinch of Italian Seasoning
- Salt & Pepper
WHAT TO DO
STEP 1: Use a large pot to boil the angel hair pasta and cook accordingly. Follow the directions on the angel hair pasta box and remove then strain the pasta once fully cooked. Set pasta aside and return pot to stove.
STEP 2: While the pasta is boiling, press and chop garlic cloves to create freshly minced garlic.
STEP 3: Add 3 tablespoons of olive oil over low-medium to heat in the pot. Once hot, toss in minced garlic and allow to simmer until garlic is golden.
STEP 4: Once garlic is golden, add in trim-colored cherry tomatoes and stir for 5-6 minutes. It is perfectly okay if the tomatoes burst but the goal is to keep them in tact until the pasta is ready to be served.
STEP 5: Reduce heat to low and add in angel hair pasta to pot. Gently stir the tomatoes, olive oil and garlic into the pasta while also adding the remaining olive oil.
STEP 6: Sprinkle Italian seasoning and pinch of salt and pepper into pasta and squeeze the entire lemon half into the mixture.
STEP 7: Stir and plate pasta. Sprinkle desired amount of shredded parmesan cheese and serve immediately. Enjoy!
