Why do I love instant mashed potatoes? I love instant mashed potatoes because they are the perfect side to any weeknight dinner without the hassle of peeling and boiling potatoes. Instant potatoes also come in handy during the holidays because they are just SO incredibly EASY to whip up!
I discovered two ways to jazz up instant mashed potatoes and I am so excited to share both ways for you to try too!
Easy Cheesy Baked Mash Bites
What You Need

- Mini Muffin Pan
- 1 Pack of Instant Mashed Potatoes
- 1 Cup Cheddar Cheese
- 2 Eggs
- Optional- Bacon Bits, Green Onions
- Optional- Sour Cream for Topping
Preheat the oven to 400. Spray mini-muffin pan with non-stick cooking spray. Follow the directions accordingly on the instant mashed potatoes pack.
Combine the eggs, potatoes, shredded cheddar and any additional toppings in a large bowl. Mix until well blended.
Spoon 1 tablespoon of mashed potato mixture into each mini-muffin container. Bake at 400 for 15-20 minutes or until the tops of the potatoes are a golden brown.
Use a knife to rim the potato bites and carefully remove the bites from the pan. Enjoy!
Cheddar Fried Mashed Potato Bites

What You Need
- 1 Pack Instant Mashed Potatoes
- Vegetable Oil
- 6 Cheddar Cubes
- 2 Cups Breadcrumbs or Cracker Crumbs
- 1 Egg
Preheat vegetable oil in a large cooking pot. Follow the directions accordingly on the instant mashed potatoes pack.
Scoop 1/2 tablespoon of mashed potatoes and place 1 cheddar cube inside. Cover any remaining cheddar cube with additional mashed potatoes until the cube is completely submerged and roll into a ball.
Place mashed potato balls in the refrigerator for 30 minutes.
Mix egg in a small bowl. Once chilled, remove mashed potato balls and dip into egg then immediately cover in breadcrumbs or cracker crumbs.
Repeat one time and gently drop into hot oil. Allow to fry 2-3 minutes or until golden brown.
Place on plate with paper towel to allow any excess oil to drain and allow to cool. Enjoy!
