Sghetti Squash Baked Ziti

This EASY recipe is a FUN twist on traditional baked ziti!

WHAT YOU NEED…

  • 1 Spaghetti Squash
  • 1 Jar of Red Pasta Sauce (or homemade…more power to you)
  • 1 Diced Tomato
  • 1/4 Cup of Chopped Green Onions
  • 2 Cups of Freshly Grated Mozzarella Cheese
  • 1/4 Cup Diced White Onion

Preheat the oven to 400 degrees.

First, I like to soften my squash a tad bit in the microwave to help make cutting the squash in half just a bit easier. Poke a few holes in the spaghetti squash using a fork and wrap in a moist paper towel. Microwave on high for 4-5 minutes, depending on the size of your squash.

Next, line a baking sheet with aluminum foil and lightly grease using olive oil. Cut the spaghetti squash in half and using a spoon, scoop out the inside “pulp” of the squash including the seeds. Toss the pulp into the trash. Once the squash is scooped, place face down on the baking sheet and bake for 40-45 minutes.

In the meantime… mix pasta sauce, diced tomato, chopped green onions and diced white onions in a medium-size sauce pan. Cook on low for 7-8 minutes and set aside.

Once your spaghetti squash is done baking, check the texture of the squash by using a fork. Personally, we like our spaghetti squash to be extremely soft. Once the desired tenderness is achieved, use the same fork and string out squash onto a paper towel over a plate. Pat lightly to drain any extra moisture.

In a rectangular baking dish, mix spaghetti squash and pasta sauce. Layer with mozzarella cheese and bake for 15 minutes or until cheese is completed melted.
