Simple Shrimpy Tortellini

Friday night and this dinner is just right! After a long week, treat yourself to an EASY dinner that will please any pasta lover!

Here’s What You Will Need

  • 1 lb peeled shrimp
  • 1 package cheese tortellini
  • 1 jar of store-bought pasta sauce (I opted for Vodka sauce)
  • 1 cup shredded Mozzarella cheese
  • 1/2 cup shaved or shredded Parmesan cheese
  • 1/2 diced tomato
  • 2 tbsp. chopped Parsley
  • Salt & Pepper
  • 1 tbsp. Garlic Powder
  • Olive Oil

In a medium size pot, boil your tortellini according to package directions and strain.

Saute’ shrimp in a large skillet using olive oil over medium-high heat. Sprinkle with garlic powder, salt, and pepper while cooking until shrimp are well done.

Combine cooked shrimp, tortellini, diced tomato, and pasta sauce in a large bowl.

Once your ingredients are mixed together, transfer to a cast iron skillet and top with both cheeses.

BROIL on high until cheese is slighty toasted. Watch closely as in don’t walk away for longer than a couple of minutes or your amazing meal you put together that will pair lovely with a glass of wine will burn to a crisp.
